Our breads are shaped and baked by hand producing a rustic loaf full of character. Using only natural ingredients, everything organic, creates superb texture and flavour in our bread. There are no additives, no factory processes and no shortcuts in what we bake.

Our partners, whether high street health food shops, organic farm shops, city markets or forward thinking restaurants, all appreciate our transparency, our “by hand” philosophy and our passion for adding value to their enterprise.

Our customers, the consumer, value the lack of additives, preservatives or cost cutting products in our bread. Our bread is made with flour, water and salt.

Our Paragon grain is sourced from Eastbrook Farm in Wiltshire and then stone ground in our traditional mill in the bakery.

 The advantage of the Paragon grain milled in this way is that it contains none of the statutory addiditives and enzymes associated with mass produced flour – added calcium carbonate, iron, thiamin and nicotinic acid.  By law these additives need to be suplemented by millers because white mass-produced flour is very highly processed, ground at high speeds and subjected to excessive heat which depletes these substances during production.

 Our grain is gently ground between stones, temperature is kept to a minimum so that these vital ingredients are preserved and retained naturally in the flour. Some of the natural bran and wheat germ is retained, even in our white flour, adding flavour and texture.

Our products are all Demeter certified, a very strict set of organic and biodynamic standards.
